Weight loss kick-starter
I have been feeling a little fat lately and the timing is anything but opportune. It is time to resort to my secret weight-loss weapon: THE SOUP
A mega-shot of (organic) vegetables and spices that helps my body detox, deflate and get rid of a couple of kgs fast, without depleting my energy or destroying my mood. You can do this between 1 – 3 days, depending on your state of emergency and overall goals. I usually do it to kickstart a diet plan but also on its own, once a month, to give my body a break from eating fatigue. One day is very feasible to do and will instantly make you feel better and lighter. Two days is beginning to stretch it but worth the result. Three days is bordering on too much but if you can hold it you will be amazed at its transformative powers.
for 1 person, for 2 days (adjust accordingly for more people / days)
- Potatoes, 4
- Zucchini, 4 big ones or 8 small
- Carrots, 2-3
- Onions, 2 medium ones
- Celery, bunch of
- Parsley and/or Coriander, handful of (or according to taste)
- Olive oil, a good drizzle (tiny drizzle if hardcore / generous addition if not)
- Spices (cayenne pepper, turmeric, chilly flakes – but feel free to play around)
- Salt & Pepper
Add a stock cube of your choice (preferably homemade)
Peel & quarter the potatoes & onions, scrub the zucchini and carrots and cut them in (very) thick slices, roughly chop the celery, parsley & coriander. Throw in a big pot and top with water, enough to cover it all and then some. Add the condiments and boil for ~20 minutes on high. When ready, remove from heat and half-squash with a hand blender (in absence of one break it up with a fork).
The result stands somewhere between bland and yummy, depending on how much you tweak the dosages (e.g.more water – less tasty / more spice – less boring). Even if you opt for the hardcore, watered-down version it can still be satisfactory: the secret is in pumping yourself into loving it. Savor the healthy goodness you are offering yourself. More importantly, keep the end result in mind.
Also, adding lemon to the soup is highly recommended.
Eat as much of it as you want. The idea is you do not eat anything else for the day, but you can have unlimited quantities of the soup. It rids you of 1-2.5 kg in 1-3 days, without feeling starved or culinarily disappointed.
